So I can get any one of these modules for around the same price on ebay for between $500 and $800... So which is the best to play in a band mix?

Roland, Korg, or Yamaha?

It depends. For myself, maybe none of those 3.

If you really are focused on a GREAT piano sound, I like the General Music piano sounds best -- I have the GEM RP-X module.

If you are looking for just a variety of voices, then it's a matter of selection and taste; others here may have specific views on some of the modules.

The L1 Speaker System will let you REALLY hear the differences between them -- and hear any of them at their best.

I have a Motif ES module and a Fantom XR... Yammy seems to have better acoustic instrument sounds (to me).
